here goes!!!!
this is what i'm eat'n as i'm typing:
i call it the "ten-minute, minimal dish-wash'n recipe-less carrie's special: coconut curry pineapple shrimp & chicken fried rice" =D
it's my 1st time making curry fried rice & only my 3rd time ever cook'n with curry powder. this tasted okay...not enough curry, maybe? no salt, maybe? i didn't add any salt or soy sauce...problem with it is that there's no unify'n taste. the pineapple tastes sweet on its own, the chicken bland, the shrimp too, and the rice not curry-ish or coconut-ty enough.
how to make it: 1. saute some garlic with olive oil, 2. add the chicken, minced ginger & coconut milk, 3. toss in frozen veggies, shrimp & pineapple, 4. sprinkle some curry on top, mix well, 5. once chicken is cook'd, add rice & mix until all the rice has become yellow - VOILA!!!! DONE!!!
only dishes i had to wash was the cutting board, knife, pan, spatula, bowl & chopsticks. NICE!!!
